Any pros/cons to deploying the generic version of Intel ProSet Wireless on 2100b, 2200b/g, and 3945a/b/g adapters would be appreciated.
No problems as long as you don't use Aruba WLAN switches. If you use Aruba, buy some other vendor's cards (Atheros, Broadcom, etc).
Intel Proset with Aruba WLAN switches would really not be an issue, IF you turn on certain parameters on the WLAN switch.
Any client should be compatible, and upgrading the drivers on the clients should resolve a lot of issue.
